Coconut rolls (Indonesian)
Ingredients:
1/2 teaspoon salt
2 tablespoon oil
4 large eggs, lightly beaten
225 g flour
1 tablespoon sago flour
A few drops of green colouring
450g coconut milk
Ingredients:

Method:
1. Mix coconut milk with other ingredients till smooth and let stand for 1/2 hr.
2. Heat and grease a non-stick pan. Pour just enough batter to cover the base of the pan thinly. Fry pancakes till done, and pile them to cool.
3. Fill each pancake with 2 tablespoons of coconut filling, then roll.
Coconut filling:
3 tablespoons sugar
285g grated palm sugar
3 tablespoons water
6 screw pine leaves
565g grated coconut, white
1 tablespoon sago flour mixed with 2 tablespoons water.
Method
1. Melt and dissolve the sugar in water.
2. Add coconut and lower heat, stirring till almost dry.
3. Add flour and cook for 5 mins, then cool.
